Chocolate Cobbler - Gluten Free


Warm. Sweet. Chocolaty. Indulgent. Delicious. Comforting. Impressive. Perfect. Heavenly.

Try it. You'll see. It's my signature dessert, and it can be yours too (I'm not selfish!). This Chocolate Cobbler bakes into a soft warm cake with a slightly crisp top. The cake layer "floats" on a sea of warm, decadent chocolate sauce. Serve the cobbler in a bowl with Vanilla ice cream and pour the warm chocolate sauce on top. This cobbler is my constant craving. I found this recipe in a cooking magazine a few years ago and adapted it to make it Gluten free. Let me know how much you love it! :)

Chocolate Cobbler - Gluten free

1 cup Pamela's Ultimate Baking and Pancake Mix
1/2 cup sugar
2 Tablespoons plus 1/4 cup baking cocoa, divided
1/2 cup milk
3 tablespoons vegetable oil
1 cup packed brown sugar
1-3/4 cups hot water
Vanilla ice cream, optional (but highly recommended!)

In a bowl, combine the Pamela's Ultimate Baking and Pancake Mix, sugar and 2 tablespoons cocoa. Stir in milk and oil until smooth. Pour into a greased 8 inch square baking pan. Combine the brown sugar and remaining cocoa; sprinkle over batter. Pour HOT water over top (DO NOT STIR). Bake at 350 degrees for 40-45 minutes or until top of cake springs back when lightly touched. Serve warm with ice cream if desired. Yield: 6-8 servings

  1. I think I did something wrong with this recipe, but not sure what. Mine was cakey on the top, but soupy underneath. It was ok, but I am not likely to make it again.

  2. Hi Erin,

    It sounds like you prepared it properly, because in this recipe the cake layer is supposed to sit on top of a generous sea of hot chocolate sauce after it comes out of the oven. The cake and sauce are then scooped into bowls and eaten together.

    Perhaps knowing that this is actually how the cake is supposed to be after it is baked will give you the incentive to try it again.

  3. Oh em geeeeee! I made this two nights ago, enjoyed it immensely, then woke up to discover that my "elves" had eaten the remainder. It was clear what needed to be done. I went to the store, bought vanilla ice cream, and commissioned my 16 year old to make another batch. Wow! With ice cream, it was even more spectacular, and we were able to enjoy the leftovers tonight.

  5. Ohmigosh! We've now made this SEVEN times!!! I have thousands of treat recipes bookmarked, for the RARE times I make treats. This chocolate cobbler has toy taken over our world, and is the only treat recipe in interested in now ;) Bravo! And I'm making it with friends this week - they fell in love with it, too!
