My 2 Cents:
Of all of the delicious mixes I prepared, I would have to say that my family and I were most impressed with Mixes from the Heartland's Gluten Free Strawberry Angel Food Cake. Just look at the photographs (above) of the actual cake that I prepared! Beside the obviously gorgeous pink color, the cake rose high, had a fluffy texture like any self-respecting angel food cake should, and had a fabulous strawberry flavor. I envision this cake making future appearances at spring get-togethers and holiday celebrations, baby showers, and birthday parties. Heck, I would bake this delicious cake again "just because!"
Mixes from the Heartland's Gluten Free Impossible Coconut Pie was also fantastic! As many of you know from my past recipe posts I have a "thing" for coconut! In my opinion, the flavor of the Gluten Free Impossible Coconut Pie can best be described as a coconut custard pie. This pie is rich, decadent, and bursting with coconut flavor. The best part is that thanks to Mixes from the Heartland, you can assemble this pie and have it oven ready within mere minutes! Let it bake while you eat dinner, and it will be ready just in time for dessert.
The Gluten Free Vanilla Pound Cake from Mixes from the Heartland was real hit! The cake was moist, rich, held it's shape beautifully when sliced, and tasted delightful. This is a great cake to keep on hand for any occasion, as it can be made extra special by adding sauces or fruit on top of each slice. Eating a slice plain with a cup of coffee of tea is also a real treat!
Mixes From the Heartland also makes soup and dinner mixes. My family sampled the Gluten Free Harvest Chicken and Rice Soup Mix and it was excellent! I used a combination of broth and water to prepare this soup for a richer flavor, as the instructions suggested. The result was homemade taste, in no time! There is a lot of rice in this soup, so it is not very brothy. If you like more broth in your soup like my family does, simply add more broth when preparing it. I added an extra 2 cans of broth, and it was perfect for my families taste. My kids loved this hearty soup so much that they polished off two bowls full in one sitting!
There are so many mixes on the Mixes from the Heartland website, that you really need to browse the diverse selection for yourself to see what mixes would most appeal to your family. Trust me, there is something for everyone at Mixes from the Heartland. Picking one favorite is a challenge.

My very favorite Kettle Cuisine soup flavor is the gluten free Chicken Soup with Rice Noodles. This comforting classic has the flavorful broth you would expect to taste in your grandmother's homemade chicken noodle soup. This soup is chock full of tender chicken and sweet carrots and has a good proportion of noodles to meat. The rice noodles have a great texture, and are cooked perfectly (not mushy!). The Chicken Soup with Rice Noodles is also my youngest daughter's favorite, who is an extremely picky eater; she finished every last bit of this soup.
The Kettle Cuisine gluten free Clam Chowder is the second runner up as far as favorites go; it has an authentic chowder flavor, and a generous amount of clams. The flavors are rich, and really hit the spot on a cold day.
Third Runner up is the Kettle Cuisine gluten free Organic Mushroom and Potato Soup. This soup has such a fantastic homemade flavor, and is very satisfying. This is healthy comfort food! Although it tastes great as is, I add a dash of cayenne pepper for extra kick and it is terrific!

We have instituted strict cooking procedures so that all of these soups are safe to eat for those with gluten allergies and intolerance. We carefully segregate cooking of all gluten free soups and only begin cooking soups containing gluten once gluten free cooking is complete. In addition, we test every batch for less than 5 parts of gluten per million, which is well below the FDA's proposal for 20 parts per million. As a result of these practices, we are proud to be officially certified as a gluten free manufacturer by the Gluten Free Certification Organization (GFCO).

Gluten Free Traditional Decorators' Frosting
The following is an excerpt from my feature article The Cupcake Craze in the Fall 2009 issue of Delight Gluten Free Magazine:
Decorators’ frosting is a must for piping designs on special occasion cakes. Even a simple drop flower and leaf can make a cupcake seem extra special.
If you are interested in jazzing up your cupcakes try adding color and texture. White frostings can be customized by adding concentrated gel icing colors. Wilton brand icing colors are made to produce deeper, richer color by adding just a small amount. Most importantly, gel colors will not water down your frosting like liquid food colors do. When watered down frosting cannot hold its shape for piped designs. The best part is that all of Wilton’s icing colors, decorating sugars, and decorative sprinkles are gluten free.

2 lbs. powdered sugar
¼ teaspoon salt
1 tsp vanilla
Beat all items together with a hand mixer in a very large bowl until light and fluffy (about 8 minutes). Keep tightly covered at room temperature until ready to use. May be tinted with gel icing colors and or piped with cake decorating tips and pastry bags onto completly cooled cupcakes and cakes.

My 2 Cents:
I really loved the fact that all (3) flavors of Sandwich Petals tasted fantastic! Each was unique in its own way. My favorite was the Agave Grain! I used the petals in many ways: folded in half or rolled up to contain sandwich fillings, to hold burrito filling, and for quesadillas. After quickly heating them for 30 seconds as the package recommended, they were completely pliable and ready for bending or rolling. In my opinion the taste and texture can best be described as the cross between flatbread and artisan tortillas. My favorite thing about Sandwich Petals (beside the great taste) was the fact that they do not require refrigeration or freezing; they are shelf stable for 30 days! That is good news for my freezer which is full from holding too many gluten free products!

Gluten Free Drop Doughnut Recipe
Recently Katz Gluten Free Bake Shoppe sponsored a fantastic giveaway on Gluten Free Taste of Home. In order to enter, readers were asked to mention a gluten free baked good that they missed eating, and would like Katz Gluten Free to consider making. Joseph from Katz Gluten Free must have noticed that several of you mentioned missing doughnuts, so he kindly offered to share his quick and easy recipe for Gluten Free - Dairy Free Drop Doughnuts with Gluten Free Taste of Home readers. Gluten Free Dairy Free Drop Doughnuts
Dry Ingredients
1/2 cup white rice flour
1/2 cup tapioca starch
2 1/2 tablespoons sugar
1/4 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon xanthan gum
1 tablespoon vanilla sugar (if you don't have vanilla sugar I suggest adding 1 teaspoon vanilla extract to the wet ingredients)
1/8 teaspoon salt
Wet ingredients
1 egg
1/4 cup oil
1/4 cup water
Combine all dry ingredients in a bowl and set aside. Combine wet ingredients in a separate bowl and mix; add dry ingredients to wet ingredients and mix well. Batter should be a thick creamy texture, (if too thick add a drop of water).
Drop batter by rounded teaspoon into hot oil (do not crowd; leave room, doughnuts will turn on their own). Once lightly browned on both sides, remove and place on paper towels to drain. Yield: Approximately 15 doughnuts.
Dust with powdered sugar or cut open and add gluten free filling of your choice.

Giveaway & Review: Dual Soaper from Chef'n
Cooking and baking are a HUGE part of my life. I love tools and gadgets that make my kitchen tasks easier. I recently discovered a fantastic line of unique kitchen tools from a company called Chef'n. Kitchen tools from Chef'n are more than functional... they are innovative in both functionality and design.
Choosing what Chef'n product to add to my kitchen first was no easy task, because there are so many intriguing products to choose from. I finally chose the Dual Soaper, and may I just say it was "love at first sight". The Dual Soaper is designed to hold both your dish soap AND your hand soap in the same bottle, but they are dispensed through two different spouts. My husband and I felt that our kitchen counter looked cluttered, with too many bottles of different soap products next to the sink. This is why I chose the Dual Soaper... finally, a way to consolidate the contents of two ugly soap bottles in to one great looking dispenser.
The true test... how does it perform? The Chef'n Dual Soaper passed the performance test with flying colors! It is easy to fill the two separate soap chambers with hand soap and dish soap. To dispense the hand soap you simply press the lever down, and it releases the perfect size drop for hand washing. To dispense the dish soap just tilt the bottle and give it a squeeze, to release as much soap as desired. My husband, kids, and I all agree that the Dual Soaper has made our lives easier, and our counter less cluttered. We love it!

Gluten Free Tamale Pie
Want a simple comfort food recipe that is perfect for cold winter nights? Try this recipe for Gluten Free Tamale Pie! It comes together in a snap, and makes great leftovers... that's my kind of recipe. The best part is that you probably already have most of the ingredients on hand. So what are you waiting for? You can make this tasty Gluten Free Tamale Pie for dinner tonight!
Gluten Free Tamale Pie
FILLING
2 15 oz cans of red kidney beans, rinsed and drained
2 cloves of garlic, finely chopped
2 cups of gluten free enchilada sauce (canned or homemade)
1 cup whole kernel corn
1 can (2 1/4 oz.) sliced black olives, drained
1 tsp. salt
CRUST
2 1/4 cups yellow corn meal
2 cups water
1 can (12 fl. oz.) evaporated milk
1 tsp. salt
1 can (4 oz.) diced green chiles
1/2 cup (2 oz.) shredded cheddar cheese
Optional: Sour cream, diced tomatoes, and sliced scallions for garnish.
Preheat oven to 425 degrees F. Grease an 8x8 baking dish; set aside.
For filling combine beans, garlic, corn, enchilada sauce, olives, and salt in a medium sized bowl; set aside.
For crust combine cornmeal, water, evaporated milk, and salt in a medium saucepan. Cook over med-high heat, stirring frequently, for 5-7 minutes or until thickened. Stir in chiles. Reserve 2 cups cornmeal mixture; cover with plastic wrap. Spread remaining corn meal mixture on bottom and up sides of prepared baking dish.
Bake for 10 minutes. Cool in dish on a wire rack. Spoon filling into corn meal crust. Spread reserved corn meal mixture over filling.
Bake for 15 to 20 minutes. Sprinkle with cheese. Bake for an additional 5 to 10 minutes or until cheese is melted. Garnish individual servings with sour cream, chopped tomatoes, and sliced scallions if desired. Yield: 4-6 servings
